Why is food so hard? You'd think it would be an easy thing since we have to do something about it at least 3 times a day, every day of our whole lives. But its hard!

Confession: We are not good at food at my house! I grew up eating out almost 3 meals a day so preparing well thought out and delicious food at home is a foreign concept to me.

We struggle with time, with ideas, with likes and dislikes. So here I am sharing a few things that we have tried and worked, or didn't work. Feel free to share yourself!

campaign to eat breakfast

Funny, I tell my patients they should eat breakfast. Why don't I?

Trying to reclaim time and banish the H-angry Katie, I am on a campaign to eat breakfast.  Thankful for my friend Jody who has helped me make the commitment!

#1 Breakfast right now: Simple Overnight Oats.

Ingredients:

  • 1/3 cup oats
  • 1/4 cup milk (or almond milk)
  • 1/4 cup vanilla Greek yogurt
  • 1 tsp chia seeds
  • honey
  • cinnamon to taste
  • other stuff you like 
Mix oats, milk, yogurt, seeds, and spices in a bowl and place in refrigerator the night before.  In the morning, you will have a sweet and creamy breakfast all ready to go! I like to add dried cranberries or fresh blueberries to the above recipe. My husband likes more milk, yogurt, and cinnamon than I do, so spice it up.

There are lots of fun variations on this theme- I've tried a version of carrot cake and it was good! I still plan to try a chocolate peanut butter, and maybe a chocolate banana. But what I put here is so easy and yummy we just haven't explored many others yet!
